*FAMILY RECIPE: ALMOND CAKE by Tere & Eugenia.

  • INGREDIENTS *vegan option

I. CAKE
100g caster sugar /*panela sugar or unrefined cane sugar
100g wheat flour (plain or all-purpose)
2 medium eggs /*4 tablespoons veggie oil + 1 tablespoon peach jam
1 teaspoon butter /*vegan butter
3 tablespoons milk /*almond milk
II. GLAZED ALMOND
125g butter /*vegan butter
100g caster sugar /*panela sugar or unrefined cane sugar
150g  almonds (1/2 laminated and 1/2 ground almonds )
3 tablespoons milk /*almond milk

  • RECIPE STEP BY STEP

I. CAKE
1. Preheat the oven to 180 º C.
2.  Cover the round cake pan with baking paper.


3. Separate egg yolks from egg whites.
Note by Grandma Tere: we prefer using the egg’s own shell to separate them.

4. In a large bowl beat together yolks and sugar until light.


5. Add milk, flour and butter. Stir the mixture well with rubber spatula.

6. Beat egg whites into snow.


Note by Grandma Tere: At home, we always use a mixer (lowest setting) but you can use a whisk.
7. Add snow egg whites into mixture bowl. Low mix together using a spatula.
8. Pour the mixture into the round cake pan using a spatula.


9. Bake in the preheated oven for 30 minutes approx. until brown.
10. Remove from the oven. Leave to cool for a bit.
II. GLAZED ALMOND
11. In a bowl mix together laminated and ground almonds.
Note by Grandma Tere: you can use whole peeled almonds instead of ground and laminated almonds, just chopped them pretty well.
12. Put the almonds mixture, butter, sugar and milk in a saucepan. Warm gently.
13. Stirring well until it’s all brown and liquid texture.
14. Pour the glazed almond using a spatula to spread it across the cake surface.


15.  Put oven settings for grilled and bake the cake a few minutes until brown.
Note by Grandma Tere: Please, be aware of oven times to prevent cake top from burning.
16. Ideal cake for afternoon tea or coffee.
