INGREDIENTS *Makes approx. 2 baking trays.
300g all-purpose flour
100g powdered sugar (unrefined if possible)
200g vegan butter, softened
Zest of 1 lemon (optional but festive!)
1 tsp vanilla extract

METHOD
1. Preheat the oven
Preheat to 180 °C (350 °F). Line a baking tray with parchment paper.
2. Combine ingredients:
In a large bowl, whisk together: flour and powdered sugar. Add vegan butter into cubes, vanilla extract and lemon zest (optional).
4. Knead the dough
Mix and gently knead until a smooth dough forms. Once ready, wrap the dough in cling film and refrigerate for 30 minutes. The dough may be slightly sticky; this step helps it firm up and makes it easier to handle.
5. Shape the cookies
Roll the dough to about 0.5–1 cm thickness. Use cookie cutters to create festive shapes. Place them on the baking tray.
6. Bake
Bake for 8–10 minutes, just until the edges are lightly golden. The bake time depends on the size of the cookies; adjust as needed. Let cool completely—they will firm up as they cool.
7. Assemble the sandwich cookies
Spread strawberry jam or your favourite vegan filling on the flat side of one cookie and top with another.
8. Decorate and serve
Dust with powdered sugar and serve.
