Plant-Based Spanish Omelette with Stale Bread

  • INGREDIENTS — Small Spanish Omelette

2 large potatoes or 4 small potatoes
¼ onion, or to taste
A generous handful of stale bread
Olive oil (or any vegetable oil), for frying
A pinch of salt, to taste

  • METHOD 

1. Peel the potatoes and cut them into thin, even slices or half-moons so they cook evenly. Peel the onion and slice it thinly into half-moons.
2. Place the chopped potatoes and onion in a bowl and season with salt to taste.
3. Heat the oil in a frying pan and cook the potatoes and onion until tender. Remove them with a slotted spoon and place them in a strainer to drain off any excess oil.
4. Place the pieces of stale bread in a bowl, cover with water and leave them to soak for a few minutes.
5. Drain the soaked bread well, then place it in a blender. Add a little water and blend until you have a smooth, liquid mixture with a consistency similar to beaten eggs.
6. Pour the bread mixture over the cooked potatoes and onion and mix everything together until well combined.
7. Heat a small frying pan and add a splash of olive oil. Pour in the mixture and cook until the bottom starts to set. Place a plate over the pan, carefully turn the tortilla over, and slide it back into the pan.
8. Cook the other side until set. Turn the tortilla again if needed until it is cooked through and nicely golden on both sides. Grandma Sita’s note: You can turn the tortilla as many times as you like until it reaches the texture and doneness you prefer.
