Made with leftover bread, overripe bananas and whatever fruit you already have at home, this easy plant-based recipe is fun to make — especially with kids — and a clever way to give stale bread a second life. They’re naturally sweet, budget-friendly and perfect for a little snack.

- INGREDIENTS
For approximately one baking tray
4 slices of stale leftover bread
½ cup dark chocolate chips (or leftover Easter chocolate)
A splash of oat drink or any plant-based milk, if needed
Fruit
2 cups ripe, brown bananas
1 cup blueberries, strawberries or other seasonal fruit
½ cup raisins (optional)
Natural sweetener
1–2 tablespoons maple syrup or agave syrup
Grandma Sita’s note: We use the cup method for measuring ingredients, focusing on volume rather than weight. There’s no need to weigh anything — simply use the same cup, glass or mug throughout the recipe and keep the proportions consistent.
- METHOD
1.Preheat the oven to 180°C and line a baking tray with baking paper.
Air fryer option: Cook at 180°C for 8–10 minutes, checking regularly.
2. Tear the stale bread into small chunks using your hands.
3. Mash the ripe bananas with a fork until smooth and creamy.
4. In a large bowl, combine the bread chunks, mashed banana, fruit, raisins, chocolate, maple or agave syrup and a splash of oat drink. Mix well until you have a slightly sticky mixture that holds together.
5. Using your hands, shape the mixture into small balls.
6. Place the breakies on the prepared baking tray and bake at 200–220°C for 10–15 minutes, or until golden brown.
7. Leave them to cool slightly on a wire rack… then enjoy your homemade plant-based breakies!

- 🍌 Don’t throw away brown bananas: Overripe bananas are perfect for this recipe. They add natural sweetness and moisture, while helping to bind the mixture together — a clever plant-based alternative to eggs.
- 🍫 Check your cupboards first: Leftover chocolate, nuts, seeds, dried fruit or other bits and pieces waiting to be used can all find a home in your breakies. There are no strict rules in Grandma Sita’s kitchen!
- 🍞 Give stale bread a second life: Dry bread is perfect for this recipe. Instead of throwing it away, transform it into a delicious snack. You can use different types of bread, too — just remove very hard crusts if needed.
- 🥣 Get the texture right: The mixture should be soft and slightly sticky, but easy to shape. If it is too dry, add a splash of oat drink; if it is too wet, add a little more stale bread.
- 👧🏻 Make them together: This is a lovely recipe to make with children. Let them mash the bananas, mix the ingredients and shape the breakies. Grandma Sita believes that cooking together is one of the best ways to learn about food and avoid waste.
- ❄️ Storage and freezing: Keep the breakies in an airtight container for up to 3 days. You can also freeze them for another day. Let them thaw for about 30 minutes, then warm them gently in the oven before serving.
